chore: bump version to 0.11.1

* chore: ignore Copilot dogfooding scaffolding in .gitignore

Ignore the directories and files generated by
`specify init --integration copilot` so the dogfooding scaffolding used
during Spec Kit feature development isn't accidentally committed.
